Sweet Potato Pudding

Method

    Preheat oven to 165°C.

    Grate Sweet Potatoes and set aside.

  • 3

    Combine the Grace Coconut Milk, Water, grated Sweet Potato and mix well.

    Add all remaining ingredients (except for the 1 tbsp unsalted butter) and mix well.

    Scrape mixture into a well-greased baking pan and dot with the remaining Unsalted Butter and and bake for 1.5-2 hours until set.

    Remove from the oven and allow to cool before slicing and serving - Enjoy!

  • • x1 400ml can Grace Coconut Milk
  • • 500ml Water
  • • 60g raisins
  • • 500g Brown Sugar
  • • 200g Dunn's River Fine Cornmeal
  • • 60g Unsalted Butter
  • • 60g Plain Flour
  • • 2 tsp Dunn's River Mixed Spice
  • • 2 tsp Vanilla Essence
  • • 1/2 tsp Salt
  • • 1 tbsp Unsalted Butter
