Sweet Potato Pudding

Preheat oven to 165°C.

Grate Sweet Potatoes and set aside.

Combine the Grace Coconut Milk, Water, grated Sweet Potato and mix well.

Add all remaining ingredients (except for the 1 tbsp unsalted butter) and mix well.

Scrape mixture into a well-greased baking pan and dot with the remaining Unsalted Butter and and bake for 1.5-2 hours until set.

Remove from the oven and allow to cool before slicing and serving - Enjoy!

- • x1 400ml can Grace Coconut Milk
- • 500ml Water
- • 60g raisins
- • 500g Brown Sugar
- • 200g Dunn's River Fine Cornmeal
- • 60g Unsalted Butter
- • 60g Plain Flour
- • 2 tsp Dunn's River Mixed Spice
- • 2 tsp Vanilla Essence
- • 1/2 tsp Salt
- • 1 tbsp Unsalted Butter
