Mackerel Fritters, with Black Bean & Mango Salsa

Deliciously savoury and super versatile – Great for lunch, dinner or even for breakfast, and perfect for entertaining too! All served with a fruity, refreshing Black Bean & Mango Salsa.

Method

    FOR THE MACKERL FRITTERS:

    1) Combine 270g of Grace Salt Fish Fritter Mix with 125ml of water.

    2) Drain the contents of your Grace Mackerel in Brine can, flake the mackerel pieces with a fork, and combine these into the batter mix. Stir well until fully combined, then let sit in the fridge for 5 minutes.

    3) Portion into 1 tablespoon sized fritters and fry in ½ inch of vegetable oil on a medium-heat for 3-5 minutes, turning occasionally, until crispy and golden brown.

    FOR THE MANGO & BLACK BEAN SALSA:

    1) Place the Dunn’s River Black Beans, bell pepper, spring onion, mango and sweetcorn in a large bowl.

    2) In a small bowl, combine the Dunn’s River Everyday Seasoning, Grace Hot Pepper Sauce, coriander and lime juice and stir well.

    3) Pour the dressing over the salad mixture and combine well until thoroughly coated, and serve alongside your Mackerel Fritters and a dipping bowl of Grace Jerk BBQ Sauce - Enjoy!
