Jerk-spiced Johnny Cakes (V)
A twist on a Jamaican favourite – Jerk-spiced Johnny Cakes (sweet Jamaican dumplings) stuffed with Ackee & Roasted Peppers.

Finely dice pepper and slice spring onion. Drain Ackee.

In a thick bottom pan, heat oil over a moderate heat, add the bell peppers and thyme and cook until softened.

Once the peppers are soft, add Ackee, spring onion and Grace Jerk BBQ Sauce, stirring well.

Remove from heat and allow to cool.

Prepare Johnny Cakes mix according to the packet instructions and once proved, divide into 12 equal pieces and roll into individual dumpling balls.

Take your thumb and make a dent into each ball to receive the Ackee and pepper filling.

Fill each dumpling with the Ackee & Pepper mixture.

Draw the dough over the filling and seal each dumpling, ready for frying.

Fry Johnny Cakes until fully cooked and a delicious golden-brown colour.

Drain cooked Johnny Cakes on paper kitchen towel before serving warm with an extra drizzle of Grace Jerk BBQ Sauce – Enjoy!

- 270g Grace Johnny Cake Mix
- 540g Dunn’s River Jamaican Ackee
- 2tbsp Grace Jerk BBQ Sauce
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 2 Spring Onion, finely sliced
- 3tsp Thyme
- Oil for cooking.
