Jamaican Jerk ‘2 Ways’- served with Rice & Peas Jerk Chicken Thighs / Jerk Cauliflower Steaks (V)

FOR THE JERK CHICKEN THIGHS:
1) Make several cuts in each chicken thigh down to the bone then add your chicken pieces into a large bowl along with 2-3 tablespoons of Grace Jamaican Honey Jerk Seasoning or Dunn’s River Jamaican Jerk Seasoning, coating each piece of chicken thoroughly with your jerk paste.
2) Cover your bowl and place in the fridge to marinate for at least 20 minutes to overnight.
3) Place your jerk marinaded chicken pieces onto a baking tray and roast in a pre-heated oven at 180°C for 40-45 minutes until golden brown and fully cooked through.

FOR THE JERK CAULIFLOWER STEAKS:
1) Cut 2 thick slices from the middle of the cauliflower (save the rest of the cauliflower to use in further dishes).
2) Brush both sides of each cauliflower steak with Grace Jamaican Honey Jerk Seasoning or Dunn’s River Jamaican Jerk Seasoning and leave to marinate for 10 minutes.
3) Preheat your air fryer to 180°C for 5 minutes then place your cauliflower steaks into the air fryer tray, and cook for 12-14 minutes, flipping your steaks halfway through, until the stems are nice and tender, and the cauliflower is well charred around the edges.

FOR THE RICE & PEAS:
1) Pour Dunns River Red Kidney Beans into a saucepan and fill with water slightly above the level of the peas, place on a high heat, and bring to a boil.
2) Add the chopped spring onion, Dunn’s River Ginger Garlic Pimento Seasoning, Dunn’s River Coconut Milk (and optional Scotch Bonnet Pepper) to your pot and stir well.
3) Wash 500g of Easy Cook Long Grain Rice (until the water runs clear) and then mix well into your saucepan and cook on a medium heat for 40 minutes, stirring occasionally.
4) After 40 minutes remove the Scotch Bonnet Pepper from your pot, then stir the rice well and fluff up with a fork before serving.

- Cauliflower x2
- Spring Onion x3 stalks, finely chopped
- Easy Cook Long Grain Rice x3 tablespoons
- Vegetable Oil x3 tablespoons
- Water x 250ml
