
Classic Carnival-style Jerk Chicken
Bone-In chicken quarter, marinated in Dunn’s River Jamaican Jerk Seasoning, served with Grace Festival Dumplings.

Method
- 
							1Slash chicken piece twice on the thigh and once on the drumstick. Marinade in the Dunn’s River Jamaican Jerk Seasoning for between 20 minutes, to overnight. 
- 
							2Pre-Heat oven to 200oC / Gas Mark 6. 
- 
							3Place marinated chicken pieces on an oven tray and bake for 35-45 mins, until deliciously gold and smoky. 
 
- 
							4Heat oil for frying to 180oC. 
 
- 
							5Make up the Grace Festival mix according to instructions on the packet and use finger to mold dumplings into the classic Festival shape. 
- 
							6When chicken is cooked, allow to rest for 10 minutes 
 
- 
							7Fry you Festival dumplings until golden, turning occasionally during cooking. 
- 
							8Remove Festival dumplings from oil and drain on kitchen paper. 
 
- 
							9Serve your Jerk chicken alongside your Festival dumplings, with a drizzle of Grace Jerk BBQ Sauce – Enjoy!

- 270g Grace Festival Mix
- 4tbsp Grace Jerk BBQ Sauce
- Oil for cooking
