Ackee & Saltfish

    Heat oil in a frying pan over a medium-high heat and sauté the onion, garlic, spring onion, tomato, red pepper, thyme and hot sauce for 2-3 minutes until your oil is well seasoned.

    Add the flaked saltfish, Ackee and black pepper to your pan then toss gently to cover your ingrdients in the flavoured oil, yet being careful not to break up the Ackee.

    Reduce heat to low and continue to cook for a further 2 minutes before serving - Enjoy!

  • • 50g Vegetable or Olive Oil
  • • 1 small white onion, chopped
  • • 3 cloves garlic, minced • 2-3 stalks, dried thyme
  • • 2 stalks spring onion, finely chopped
  • • 1 medium tomato, chopped
  • • 1 small red pepper, finely sliced
  • • 250g skinless & boneless saltfish, boiled & flaked
  • • x1 540g can Dunn's River Ackee, drained
  • • 1 tsp black pepper
  • • 1 tsp Grace Jamaican-style Hot Sauce"
